Team Petite Grâce


Led by a husband and wife team, Grace and Dwain turned their passion for travel and enjoying fine foods into the delicious croissants you see today.
Each croissant is handmade by our Executive Pastry Chef, Grace, following traditional French techniques to ensure you receive the croissant you deserve.
She trained at the Institut Culinaire de France in Bordeaux under an intensive program taught by French chefs and designed by Kyung-Ran Baccon, World Pastry Championship silver-medallist, in collaboration with Pierre Hermé, one of France’s greatest pastry chefs.
Dwain is a U.S. Coast Guard Veteran, professional consultant, and has past, significant experience making both blue and cheddar cheeses at the Rogue Creamery. He acts alongside Grace as Sou Chef and is the Marketing Director of Petite Grâce.
Together, they bring their expertise, vision, and strategic focus to position Petite Grâce as a trusted and distinctive destination in Medford’s growing specialty food scene.

A real croissant takes time, skill, and the finest ingredients. It is one of the most labor-intensive pastries in baking, requiring precision at every step.
Our process begins 2 days before it is ready to be enjoyed. We start by mixing the dough, folding in rich butter to create delicate layers, then rolling, proofing, and finally baking.
Croissants are a treasured part of French culture, and we are honored to preserve this time-honored culinary heritage.
Look for visible layers, a rich buttery aroma, and a light honeycomb crumb just like ours.
Our ingredients are sourced with care, local when possible, but always premium.

Why the name Petite Grâce?
Petite Grâce was inspired by a childhood nickname, “Little Grace,” and by the timeless elegance of French pastry, where the word grâce evokes charm and beauty.
The name honors warm memories, when a simple treat could bring great happiness, while also reflecting the pastries we dreamed of making.
Though Petite Grâce is not the literal translation of “a little grace,” it became a gentle play on words: a reminder to give ourselves a little grace, embrace the journey, and share joy through our pastries.
Today, it reflects both ideas: the elegance of French pastry and an invitation to slow down and enjoy a small moment of grace in your day.
